Wild macerated mixed berries, cherries, plums, herbal, with black peppercorns and a bit of mineral and smoke. This edge-y, natural wine, cult phenom is exactly what you would expect from Frank Cornelissen if a bit lighter than his recent bottlings. There is a freshness and nervy acidity along with a slight prickle on the tongue that is reminiscent of fun homemade wines.
Vinification: Destemming and light crushing of the grapes
Fermentation: starting with a “pied-de-cuve” keeping the must on the skins for 5 days
Aging: In neutral epoxy tanks from 2500 liters to 8000 liters
Fining: No
Filtering: Before bottling with PE cartridges of 5 micron
Sulphur: values can vary from 15 to 60 mg/l
