From the the premier village of Rasteau in the southern part of the Cotes-du-Rhône, this wine is packed with dark chappy fruit balanced with acidity and tannin. The Grenache structure combined with Syrah brings a remarkable balance. This northern grape gives this touch of violet and spices. Mourvèdre spreads notes of candied fruit and undergrowth and carignan completes the structure for its deep color and aging.
Native yeast fermentation, no acidification, 20 days of maceration with one pump-over per day. A small amount of SO2 is added after malolactic fermentation in order to protect the wine at racking. 90% of the wine is aged in concrete tanks 10% in old demi-muids.
