Domaine Gauby is situated in and around the tiny, bucolic Roussillon town of Calce, inland from Perpignan and a short drive from the Cataluña border of Spain. Lovely floral and garrigue notes emerge on the nose. It's a delicate, red-fruited wine, with raspberries and cherries mingling with wild herbs and subtle hints of savory spice. It's medium-bodied and silky, and very approachable.
Exclusive use of indigenous yeasts, no acidification of the wine nor sweetening of the must, no clarification nor filtration. Aged for 30 months in used barrels.
