Cabernet Sauvignon
Light-bodied, juicy, non-tannic, soif-y red oddly enough made from Cabernet, oddly enough from the northwest of Sicily, where the grape is not traditionally grown.
From two different vineyards : one on Pleistocene clays that ripens in early August and the other one on calcarenitic marl that matures in late September. The first vineyard is vinified with a whole bunch maceration for 10 days, the second is made a short maceration of two days and the fermentation ends without skins. Organic
