100% Côt aka Malbec. Averaging 50 years of age with some up to 100 years old, Valérie's Gamay vines are planted on clay-limestone soils in the heart of the Cher valey of the Touraine region in the Loire Valley. She farms them organically (soon to be certified) and harvests them by hand as of the 2016 vintage. The grapes are destemmed and thrown directly into stainless steel and/or fiberglass vats. Fermentation is spontaneous with indigenous yeasts; the wine is aged in vat. It is bottled without fining or filtering. The use of sulfur is minimal, finishing at about 11 mg/liter.
