2019 The Carignan grapes come from vineyards in Huerta de Maule, from non- irrigated granite soils where the vines are at least a 70 years old. Huerta de maule is located some 300 Km south of the city of Santiago at 300m above sea level. After manual de-stemming, for fermentation we use old French barrels. Fermentation is spontaneous and natural, without the addition of commercial yeasts. The entire fermentation process lasts around three weeks, with daily manual stirring and the monitoring of temperature and densitiy so as to unsure the wine´s integrity. When the fermentation ends, the wine is aged for 1 year in the same closed old barrels used for fermentation. Organic
