A Chenin a little off the beaten path. It has honeyed and stewed yellow fruit notes with lovely acidity and some texture. If you are looking for a more classically inclined Chenin, but still true to its natural roots, this one is for you.
Manual harvest. Soft and slow pressing. Fermentation with native yeast for about 2 months. Elevage on fine lees for 6 months. Light filtration.
