Sangiovese
100% Sangiovese vinified as a white wine from estate-grown grapes on marly soils exposed to the SW at 400m elevation. Grapes are direct pressed for a spontaneous fermentation with indigenous yeasts and no temperature control. The wine then ages in stainless steel for 4 months with a further 2 months in bottle before release. SO2 added just at bottling.
