A touch of typical malvasia aromatics are sensed immediately. Floral. Medium bodied and tannic structure stands out, round on the whole, aggressively crisp, tart and dry. High acid.
Long maceration 2015 (7 months) and 2016 (9 months), without sulphur dioxide, native yeast, without filtration. Addition of fresh must of 2017 for the second fermentation in the bottle, starting from 24 Months on the yeasts for the tirage, Degorged à la Volée – Pas dosé - Millesimé; (Brut Nature; sugar content below 3g/l.)
