2018 - Nebbiolo Soft, open-knit and gracious. Succulent red cherry, mint, white pepper and chalk make a positive first impression. Hints of rose petal, mint and cinnamon blend into the creamy finish. Paitin is one of the oldest wineries in Barbaresco, they consider 1796 their founding but their roots in the area date back even further. Hand harvested. Fermented in stainless steel using the submerged cap (cappello sommerso) method. 40-45 day maceration. Aged for thirty-six months in Slavonian oak botti.
