Fresh yet complex expression of the Pais variety showing its earthy typicity and a fine and refreshing tannic structure.

Grapes are hand harvested and destemmed. Whole berries are added to the fermentation vats.  Gentle extraction with light punch downs are applied. Maceration lasts for 23 days, after which 82% of the wine is transferred to clay amphora and the remaining 18% to a used French oak barrel. The wine is aged during 11 months prior to bottling.
