2020 - 95% Pinot Noir, 5% Riesling
Delicate macerated strawberries with seaweed umami vibes. Extremely fun and interesting on the palate! Would pair amazingly with Japanese food and some sushies!
80% of the blend was whole bunch pressed and then co-fermented in stainless steel. 10% underwent carbonic maceration and 10% spent 10 days on skins. Bottled unfined, unfiltered, no sulfur added.
