2020 - Chardonnay
Flinty reduction with a hint of zippy Volatile Acidity. The palate unfolds with salted lemons, green apples, yeast and hop flower cones. Cloudy and dynamic.
Hand picked. Partially destemmed + whole bunches on top. Maceration 6 to 10 days before press. Fermentation finishes in barrel and ages 9 months.
