The taste of sunshine and the color of sunlight through a window after a rain. This rosé, from the clay & limestone soil of Touraine in the Middle Loire Valley, is organic & a bit astringent & slightly tannic. Despite those characteristics, it's fruity: cranberry with. Raspberry notes & white pepper in the finish. Initially, bubblegum aromas were a bit off putting. Fortunately, they soon gave away to cranberries with dried herbal notes.
Grapes are pressed immediately and fermented with indigenous yeast, resulting in a light extraction of color. The wine spends 6 months on its fine lees in tanks. Filtered, not fined.
