2018 - Pinot Noir
bursts with cherries, mint, violets, and wild herbal honey in the nose. The mouth has softened tannins and a gorgeous freshness.
The grapes are destemmed and go into the whole barrel, where the skins are co-fermented for 26 days. Then the must is gently pressed. After fermentation, the wine matures for 12 months in barriques, a small part of which is new. The wine is not filtered and is bottled without sulfites.
