All grapes are hand-harvested in small crates with successive sorting to ensure only pristine fruit makes it to the cellar. Fermentation occurs spontaneously with indigenous/native yeasts. The maceration process is short (lasting under 20 days), with gentle extraction and low temperatures to preserve the vibrant, crunchy red fruit flavors without pulling bitter tannins from the skins. The wine is aged for 6 to 8 months in a combination of concrete vats and neutral, older barrels
