Everything is done the traditional way here: vines are worked by hand, the vineyards are worked by draft horse and there has never been any use of irrigation or chemicals. The only new quality is the adoption of biodynamic techniques starting in 2010. This wine is made from old-vine Pais - a grape that was brought to Chile (& Peru) by the Spanish, but was totally wiped out in Europe by phylloxera. This is an incredibly vibrant wine; almost incandescent garnet color and juicy, fresh fruit that tastes like you're biting into bright berries straight off the bush along with some subtle smoke and spice. Goes With: lamb shawarma or a great burger. Organic, biodynamic, native yeast fermentation, unfined, unfiltered, dry-farmed.
