Farming: Organic/Biodynamic, Unfined/Unfiltered, Low to no added SO2
Salmon color, the notes of cooked red fruits, strawberry and yeasty. Medium body, intense, slightly pink grapefruit, lively acidity, interesting.
Harvest: by hand
Winemaking: Spontaneous fermentation and maceration for a few hours, refining on its own fine lees.
Aging: 5 months in used oak barrels
