Fresh and elegant white. Made from Riesling and Ugni Blanc from vineyards over 70 years old, in sandy soil. Vallisto reveals great acidity and aromatic complexity. It stands out for notes of citrus fruits and floral touches. It has slightly cloudy as this wine is not filtered.
Direct pressing into 500L barrels protecting the juice at all times from oxidation with dry-ice (carbonic). Fermented with native yeasts. No acid correction, no nutrients added. The wine is not filtered. Due to low pH this wine did not do malolactic fermentation.
