Dunaj, Alibernet
Funky and earthy medium-bodied red from an organic farmer. Stemmy cherry fruit, allspice, a touch of barnyardy brettanomyces. Rustic and ever so delightful with a bit of a chill and served with cold cuts and fresh vegetables.
Grapes are hand harvested and destemmed. The juice is cofermented in open casks for about 15 days, punched down by hand. The wine is aged in 220-liter barrels for about 3 months. The wine is bottled unfined and unfiltered under crown cap, with zero addition of sulfur.
