This wine is a classic benchmark of the variety and its homeland. A vibrant aromatic melange of sea-breeze freshness! A bone-dry wine with white floral aromas, zippy citrus fruit and great mineral backbone. A classic pairing for seafood, this is especially delicious with oysters. 40-60 year old vines grown in volcanic soils, with their own rootstock, and trained into kouloures, the traditional basket shape (to protect from wind and conserve water).
Winemaking: Destemmed, macerated for 6 hours. Fermented and raised in stainless steel.

Excellent Assyrtiko
Very fresh and fruity but dry Assyrtiko from Santorini. One of the nicest I have had in a while.
