Oxidative Jura-like notes on the nose, rhubarb, pepper and sweet spices on the palate, this is a perfect mix of old and young wines with enough lift for a lengthy mineral infused finish.
Multi-vintage "solera" style, includes some juice dating back to 2011. Vinification with natural yeast from their own grapes, without any fining or filtering.Alcoholic fermentation and élevage on fine lees in 225L barrels and 500L demi-muids. Natural malolactic fermentation, Aged on the lees in bottle for 18-20 months. No added sulfites.
