Schlossberg parcel picked early and pressed into fibreglass. Saint Hippolyte parcel picked one week later and put whole-bunch into the Schlossberg. Infusion for seven days then pressed and put into old barrels for six months on lees. Bottled April 2023. Unfiltered, unfined. No added S02
