Bone-dry and aromatic, showing notes of white flowers, jasmine, lavender, citrus peel, orchard fruit, and wet stone. Lightly textured with bright acidity and a savory mineral finish. Fresh, vibrant, and easy-drinking with subtle wild herbal character. Excellent with seafood, soft cheeses, salads, and lighter Asian dishes.
Pinot Gris, Pinot Noir, and Riesling are pressed together and left to spontaneously ferment in one stainless steel tank for 9 months.
