True to the style of this limestone-rich part of the Jura, their wine shows much more lean and mineral than oxidative. The nose shows invigorating aromas of tart apple, green tea, and white flowers. The palate is taut with a linear quince spice acidity with savory notes of sea salt, apple, and lemon curd. A delicious, mouth-watering sparkling wine to pair with salty fried foods, cheeses, or as an apéro! (Amanda Bowman CSW)
