This beauty is bone-dry and citrusy, with delicate bubbles and layers of citrus, flowers and cantaloupe, and a long, zesty finish -- a serious and super delicious fizz!
No maceration, vinified like a white wine with the juice bled from the grapes immediately and allowed to spontaneously ferment for 7 days in concrete; secondary fermentation in bottle using the same wine then aged for one year before release.
