It's such a fun wine it even has it's own dedicated Italian disco playlist by Milan to go with it - look it up on Spotify (Senza Italo Vibes by milan_nestarec) and let rip. In Italian, senza means "without", which is both a statement that the wine did not get any makeup or additives during production, and a hint of its carefree character.
First, we carbonic-macerated Cabernet Sauvignon & Franc grapes, pressed them before the fermentation finished, then we added a bit of Moravian Muscat and Pálava must to get the extra aromatics and local touch, so important to me in all my wines. Bottled under crown caps while still fermenting to keep the fizz and pizzazz, undisgorged and un-anything. No added SO2.
