Viognier Oxidativo (VOX; oxidative style Viognier). It is fresh with a savoury palate which is untypical of Viognier in a positive way! Fresh and powerful with great fruit character. On the nose this wine stands out for its floral and very fruity aromas and tropical fruits, aromas that contradict the flavors that we will find in the mouth.
15% fermented with the skins with wild yeast. The rest of the grapes are fermented with whole cluster on a vertical press, natural clarification to then begin a fermentation with wild yeasts between 15 and 18 degrees. One third of the fermentation goes into used oak barrels to finish its fermentation and remain there for 10 months. Stirring of lees is done to gain structure on the wine. Natural decanting takes place before bottling.
