Aromatic but not perfumy, it is dry and crisp, with subtle floral and nectarine notes dominated by its salty, briny side and intense flinty, smoky minerality. Not tannic or overtly aromatic, this is a serious, elegant wine where the skin contact just enhances the texture and layered complexity. From 250-year-old, ungrafted, dry-farmed vines.
The fruit is hand-harvested and pressed directly in whole clusters in cement tank. Fermentation is spontaneous with indigenous yeasts and the maceration is about 12 days. The wine is aged on the lees in tank for about 6 months. There is no sulfur added at any stage and the wine is bottled without fining or filtering.
