An understudy to a well structured and serious Priorat. Estrem is the first in line for Los Comuns. It has a deceiving boquette of rich dark fruit that is juicy and still fresh on the palate, with a still characteristically dry finish.
Partially de-stemmed and fermented in fiberglass tanks. Whole clusters are then added and 10 days of carbonic maceration takes place. After carbonic, grapes are de-stemmed, pressed and rested for 3 months in stainless steel. The final refinement takes place in amphora tanks for 2 months. Entire process carried out with zero additives. Unfined/Unfiltered. No added SO2
