This is a Cab/Merlot blend that is fresh, soft and luscious with aromas of violets, blueberry & sundried red fruit with the lightest herbal note. The palate is juicy but not giving itself away. The finish is quite filling but not too tannic with a lingering linearness that encourages another sip.
The fruit was destemmed but not crushed and whole berries were fermented naturally with minimal disturbance to the cap until about halfway through the ferment. Then it was plunged by foot. Fermentation lasted four weeks and the wine stayed on the skins for an additional week after. It was pressed to 60% Stainless Steel and 40% old French tonneau where the wine aged for seven months.
