Jules works in the same cellar and in the same fashion as his father, Yvon Métras. Once he believes the berries to be fully ripe and of nice concentration, the fruit is harvested, cooled down and then undergoes a gentle carbonic fermentation with natural yeast in concrete vats. Nothing is rushed in the Métras cellar, nothing! Fermentations can take over a week to simply begin. No SO2 or additions of any kind are used. Neutral barrels are used during élevage. The wines are unfined and unfiltered. Organic
