This year’s winter gin recipe starts with our OG gin as the base, followed by a 24-hour steep of foraged wild apples that we handpicked ourselves from 100(+)-year-old apple trees on Wayside Cider’s farm. Then, we add dried apples and pears for extra dimension and texture. Next, we do a shorter cold steep with a small amount of Organic Assam tea from Royal Tea New York. We chose Assam for its full bodied, malty flavor and its notes of chocolate, cocoa, and spice which pair perfectly with the gin. The final ingredient is a small amount of raw honey from the bees on the distillery’s property which rounds out the botanicals in the gin and softens the tannins of the tea. Winter Gin has a subtle sweetness which we love, but rest assured that this is still very much a spirit forward gin, clocking in at 40% ABV (80 Proof).
