2019 - San Colombano The San Colombano is harvested late, yielding a ripe lithe fruit profile that the tannins do not overpower. The chewy texture dances in tune with the fruit perfectly. Confit apricots, satsuma marmalade, salt and lemon are equally expressed in this dry but juicy orange. Spontaneous fermentation. 4-5 days on the skins, no temperature control. Aged 6-8 months in vitrified concrete & Inox steel vessels before bottling. Unfined/Unfiltered. No added SO2.
