2017 - Riesling
Opens with pure, fresh, warm and slatey bouquet of ripe, overripe and almost botrytized Riesling grapes. Geranium and green stems come through as well to liven the more rounder notes. On the palate, the wine is crisp and salty, with intensely ripe but precise fruit. This is a lush and elegant dry Riesling with a nicely round texture but still enough crystallinity and stimulating salinity on the finish.
After the harvest, the wine is briefly squeezed in whole grapes, standing on the mash for at least 12 hours. Fermentation with spontaneous yeast in large wooden barrels. It remains on the full yeast until it is filled in summer. Only light batonnage now and then.
