Unfiltered and cloudy, uncomplicated, authentic and exciting. It's refreshing, light, with zippy acidity and lively on the palate, with aromas of green apple, grapefruit and white flowers.
Whole cluster pressing with no time on skins. Fermentation takes place in stainless steel (6500L) with wild yeasts for roughly four weeks with temperature control. Bottled after first fermentation. Disgorged; no dosage. Not fined or filtered.
