In the parlance of the Pacific Northwest of the United States, June hogs were the largest Chinook salmon caught in the summer migratory runs of the fish. We strive to produce wines that are free of any additives in the cellar, apart from minimal SO2 after fermentation. Long, spontaneous ferments allow for the yeast from the grapes and our local area to develop flavors unique to the region. Our wines undergo extensive aging in older or large-format french oak barrels on the lees, for up to 3 years, and none of our wines are racked until bottling unless necessary.  Vintage: 2016 Varietals: Gewürztraminer Farming: Organic, Low Added Sulfites
