A little petulant sauvignon blanc. It showcases fresh orchard fruit, such as pears and green unripe apples. Exciting acid, violent and embracing "cream over pears" and unheard of energy. Juicy burst, candied citrus, in a fluffy spiced apple bread. Why doesn't Sauvignon Blanc always taste like this? A truly unique experience from a fantastic new producer.
Direct-pressed and hyperoxidized the must for 48 hours. It was in tonneaux for 16 months, un-topped-up.
