The Sauvignon Blanc grapes are pressed upon arrival. They do not see any skin contact. Fermentation occurs in stainless steel tanks at a controlled temperature. The wine sits in contact with the fine lees for around 6-7 months. Racking takes place late in the spring following harvest. The wine is fined and filtered before bottling.
