Alice Bouvot and Charles are the proud proprietors of 5 hectares of vines in the Arbois region of the Jura. They started their domaine in 2005 with just 2 hectares and over the years have bought small plots and slowly increased their production. On top of their warmth, the vineyards are equally as vibrant. L’Octavin is now Demeter biodynamic certified and they work to convey this message to the fullest. Wild grasses, weeds, insects, and animals all have a place in their vines creating a true ecosystem that gives a deeper meaning to each glass of their wine. Since 2009 all L’Octavin wines are "pur jus", with no additives whatsoever.  The wine is named after one of the sisters from the opera Cosi Fan Tutte. We particularly like the mouth-feel of this wine with its generous texture and lovely acidity backed by very subtle tannins. There are lovely notes of strawberries and cherries, but there is also a lingering herbal note that reminds us of marjoram or oregano. Some carbon dioxide remains in this wine to enhance its freshness, but these bubbles soon disappear in the glass. Average age of vines is 50 years from the «En Curon»  vineyard. Harvested by hand. Destemmed, 1.5 month maceration, spontaneous fermentation in barrels with indigenous yeast. Aged 12 months in Burgundy barrels.
