Dark raspberry color proceeded by dusty raspberry, pepper and dried tobacco on the nose. Palate contains chocolate, earthen notes and juicy dark fruit. The wine is complex and structured, but still easy to drink.
Minimal yeilds, wild fermentation, and judicious use of neutral oak to draw complex aromas, textural intrigue, and a true sense of a place. The hand harvested grapes were destemmed and placed into open top fermenters. Primary fermentation began spontaneously with native yeast. Each variety aged separately in neutral French oak for 16 months. Unfined/Unfiltered. Low addition of SO2.
