2020 - Melon de Bourgogne
Classic Muscadet with a new face; Minerality, racy acidity and quenching salty-ness. Bruised apple, smoke and muted oxidation meet and greet a rich palate that opens up with crushed stones, macerated apple/pear with lemon-esque acitity.
Manual harvest. Tanks are used for debourbage (settling) before racking into smaller concrete vats for fermentation and elevage for 7-8 months. All of the wines are allowed to go through malolactic fermentation, and minimal, if any sulfur is added.
