The Matin Fou is 100% Sylvaner from 20-year-old vines planted on limestone and clay soils. The grapes are macerated on skins for 2 days before fermentation with indigenous yeast followed by 8 months on the lees. Generous aromas and flavors of lemon, pear and key lime rind accompany a beautiful structure laid upon a solid mineral foundation, balanced by refreshing acidity. Impossible to put down.
