Mineral tendencies without being one dimensional. There are strong slate and gunpowder elements alongside a softer, more loving yuzu pear and honeysuckle mid palate. Balance brings about deliciousness.
The fruit is pressed whole cluster to stainless steel where it settles for 48 hours before being moved to neutral French oak for primary and secondary fermentation. The wine spends between 10 and 12 months on heavy lees before being racked and bottled. Small addition of S02 before bottling (<40ppm total.)
