Farming: Organic, Unfined/Unfiltered, No added SO2
This crunchy, red berry red has nice acidity and a hint of woodsmoke and pine mingled with almonds on the finish.
The grapes are destemmed with berries kept whole and gently pressed without breaking the skins, just enough to kick off a native-yeast fermentation in vat. Fermentations go long in this cold cellar, as do macerations, which are up to 2 months. The wine ages for a year in a concrete before being bottled unfiltered. Zero sulfur.
