Farming: Organic, Unfined/Unfiltered, No added SO2
Sweet and sour flavors with a ton of freshness. Broad white flower aromatics, with zesty citrus and delicate white pepper spice. The palate is slightly juicer, with nice breadth of style. Touch funky on the end keeps things interesting. Can be very explosive upon opening! Pop with caution. Chill extremely well, allow to settle and get ready to pour into the glass ASAP, cannot state enough how excitable this bottle is. (We recommend opening old school style: under water)
Destemmed, macerated for 1 day with the skins then the free run juice is transferred into fiber glass tanks using gravity where it remains for 2 months before being bottled without filtering, fining, disgorging or sulfur.
