Hand harvest is followed by a stringent selection of the grapes, eliminating undeserving bunches and preserving the essence of San Giorgio’s Sangiovese. Vinification occurs in oak vats, with spontaneous fermentations using indigenous yeasts and long macerations to extract slow release of noble and fully ripe tannins. This wine aged for 30 months in 30 hl Slavonian oak casks. Ugolforte was a local hero who led the people of Montalcino against the occupying forces in the 12th century.
