2019 - Bobal
Reminiscent traditional mulled spiced wine on the nose with cool wet earth and candied raspberries. I could smell this wine all day! Due to amphora aging you get all the elegance up front with this varietal sans harsh or bitter notes. Structured but not overbearing; brambly berries show on the palate with dusty tannins.
Harvested by hand. The must ferments spontaneously. After fermentation is complete, the wine moves to 500L clay amphora. (made by the ONLY tinaja maker left in La Mancha, who is 90yrs old!) 5 months aged in amphora and is racked monthly. Bottled directly from amphora without filtering.
