Poc à Poc is from Seneca Lake Muscat farmed organically on glacial silt loam. The whole clusters macerated 2 weeks in tank and then aged in neutral 1800L cask for 8 months. It's high-toned, orange-fruited, with honeysuckle and ginger, inspired by the macerated Muscats of Matassa in the Cotes Catalanes (Cesar did a stage with Tom Lubbe of Matassa). Crunchy but still has some fat to it.10% ABV. 0/0. No real VA to speak of.
