Varietals: 50% Pinot Blanc, 25% Pinot Gris, 25% Riesling
Farming: Organic, Low added SO2
Cloudy orange in appearance. Tangerine, clementine and apricot aroma. Very vigorous mousse. Tart on the palate like a geuze. Bit of tannin and fruit - nice mouth-watering quality. Just over 250cs produced.
The Pinot Blanc was fully destemmed and macerated on the skins for three weeks during fermentation. The Pinot Gris and Riesling were directly pressed and fermented separately before bottling. Yann did not wish to macerate the Riesling for fear of adding too much tannin and did not macerate the Pinot Gris in order to avoid a red or rosé color. The goal was to make a delicious orange pet nat.
